We are looking for a Chef de Cuisine to join our Roberto's Amsterdam restaurant. Roberto's restaurant represents pure Italian cuisine inspired by original signature recipes and is known for unifying Italian foods by celebrating regional differences. We exclusively use the finest Italian products and seasonal ingredients to ensure the cherished simplicity of traditional recipes is preserved.

The story of Roberto's Amsterdam starts 30 years ago when Roberto Payer takes office as General Manager of Hilton Amsterdam. His Italian roots can now be found in the authentic Italian dishes that are served in the restaurant named after him.

For our à la carte kitchen we are looking for a passionate, representative, innovative and inspirational Chef de Cuisine, who has exceptional product knowledge and is always looking for ways to improve him/herself and his/her team. As the Chef de Cuisine you will carry out the following tasks to the highest standards:

- Creating menus together with the Executive Chef
- Leading the à la carte team during the service of Roberto's restaurant, the Half Moon Lounge bar and Room Service
- Ordering products in a sustainable way, by keeping food cost and minimum food waste in mind
- Complying with the HACCP standards in a strict and disciplined way.
- Ensure the consistent production of high-quality food through all hotel food outlets
- Ensure full compliance to quality assurance requirements
- Manage all aspects of the kitchen including operational, quality and administrative
- Keep abreast of trends in gastronomy
- Exemplary hygiene and safety standards
- Coaching and developing the kitchen team
- Identify an effective approach to succession planning

**What are we looking for?**

To successfully fill this role, the Chef de Cuisine of Roberto's Restaurant should have the attitude, skills and values that follow:

- Previous, relevant experience as a Head Chef in a relevant restaurant, or Sous Chef in a five-star hotel
- Knowledge of various cooking styles and techniques
- Excellent coaching skills and willingness to challenge and grow the team
- Collaboration and team work are key to success
- Knowledge of Italian kitchen is preferred
- Excellent communication and leadership skills
- A creative approach to the production of high quality food
- A business focused approach to managing a hotel kitchen
- Ability to build relationships, internal and external, to the hotel and the company
- Excellent planning and organizational skills with the ability to multi-task and meet deadlines
- Proficiency with computers and computer programs
