The Role: Sushi Chef

As Sushi Chef, you'll work closely with our Executive Chef to prepare high-quality sushi dishes that enhance our fusion concept. This is a hands-on role where passion, precision, and curiosity are key. If you're eager to grow, you'll find room to do it here.

Your Key Responsibilities:

• Prepare sushi items including nigiri, sashimi, and rolls with precision and care
• Follow FIKISSIMO's culinary standards and hygiene protocols (HACCP)
• Maintain a clean and organized workstation
• Monitor inventory levels and support stock rotation
• Support the kitchen team in daily operations, cleaning routines, and closing duties
• Communicate effectively and contribute to a positive, team-driven kitchen environment

What You Bring to the Table:

• At least 2 years of experience in a sushi kitchen or similar culinary role
• Strong knife skills and confidence handling raw fish
• Knowledge of food safety practices (HACCP required)
• Passion for quality, creativity, and continuous learning
• Team spirit and ability to stay calm under pressure
• Fluent English is required; Dutch or Italian is a plus
• A positive attitude and a guest-focused mindset
• Valid BSN number and residency in Amsterdam – must-haves to apply

Working Conditions:

• Shift-based schedule, including evenings, weekends, and holidays
• Standing for extended periods and handling of raw seafood and sharp tools
